Recipe: Strange & Fruity Rice

I created this recipe last night for dinner.  It was surprisingly delicious.

Ingredients:

2 Tbsp olive oil
1 Tbsp vegan margarine (Blue Bonnet Light works)
3 cups cooked white rice
5 fresh okra, sliced thinly
1 celery stalk, sliced thinly
1 medium - large pineapple, peeled and chopped
1 small can pineapple juice
1 cup TVP
1 canned mixed fruit, with juice
2 Tbsp + a couple of splashes soy sauce
1/2 Tsp turmeric
1/2 Tsp curry powder
Salt to taste
Black pepper to taste

Pour can of pineapple juice over dry TVP; add a couple of splashes of soy sauce. Soak for about 1/2 hour.

In large skillet or wok, heat olive oil and margarine until margarine is melted.  Add okra and celery and stir-fry for 2 minutes.  Add TVP and fry until it begins to brown.  Stir in pineapple until the chunks are heated through.  Stir in rice until vegetables are mixed into the rice well.  Add canned fruit and juice, mixing well.  Add 2 Tbsp soy sauce, turmeric, curry powder, salt, and pepper.  Reduce heat and cook until heated all the way through, stirring occasionally.

Serve as a main dish with vegetable spring rolls, if desired.
