I created this for dinner tonight - and surprised myself with its deliciousness!
Vegetarian Spaghetti

Remember, this recipe
is easily veganized
1 Tbsp olive oil
½ medium onion, chopped
1 tsp oregano
Garlic to taste
1 each small yellow, red & orange peppers, chopped
1 small can sliced olives, with juice
½ can black beans, drained
3 Tbsp cream cheese, softened
2 Tbsp soft margarine
½ cup hot, medium, or mild salsa, as preferred
4 cups cooked thin spaghetti
Brown onion and peppers in oil. Add olives and juice. Stir in oregano and garlic. Turn to simmer. Mix softened cream cheese with margarine in a
small bowl until it is of a uniform color.
Stir into olives, peppers and onions and mix well. Stir in salsa. Add black beans. Mix well.
Fold in spaghetti. Serve with a
salad and garlic bread, if desired.
Aunt Suzy I am going to make this!! It sounds so good!! What is the serving size?

Depends on how much you like to eat, but I'd say about a cup. Hope you like it!!!
